Our Story
Brace & Ember began in a 14th-century farmhouse kitchen in the hills outside Siena, where our founder Marco Ferlini watched his grandmother coax miracles from a wood-burning hearth. The name comes from the Italian braciere — the glowing bed of embers that never quite goes out.
We brought that philosophy to Amsterdam in 2019: no shortcuts, no gas burners, no compromise. Our custom-built beech-wood oven reaches 400°C. Everything that enters it comes out transformed — slow-roasted heritage meats, hand-stretched Neapolitan dough, whole fish wrapped in fragrant herbs.
Our menu changes weekly with the seasons and our relationships with growers across the Netherlands and Italy. If something is missing, it wasn't ready yet.
Book Your Evening
We seat only 18 guests each evening — an intimate number by intention. Reservations are recommended, especially for weekends. We hold tables for 15 minutes past the booking time.

Find Us
We're in the heart of the Jordaan, a 10-minute walk from Centraal Station. Tram 13/17 stops on Westermarkt, two minutes away. Street parking available on Keizersgracht.
The wood oven is lit at 16:00 each service day. Last food orders are taken 90 minutes before closing. We accept walk-ins when space permits — look for the ember light above our door.
